COOK IT.
Start by building your fire in the Timberwolf® Smokeless Fire Pit. Place two sturdy logs parallel to each other on the bottom of the fire pit. Nestle a few fire starters, wood shavings, or crumpled paper between them, then stack some kindling across the top, perpendicular to the logs, creating a small "log cabin" structure.
Light the fire starters and let the fire take hold. Add a few medium-sized logs once the kindling is burning steadily. Allow the fire to burn down until the flames sit below the rim of the fire pit. Then, carefully set your cooking grids over the fire pit and place a cast iron frying pan on one side of the grids to preheat.
While the fire burns down to coals, whisk together the vinegar, honey, mustard, garlic, salt, pepper, and thyme. Save half of this mixture for sauce later, and marinate the pork in the remaining mixture until the fire is ready to cook on. Wash and slice the peaches into wedges.
Once the fire has burned down to hot coals, open one side of the cooking grids and bank the coals to one side of the fire pit. If needed, add a small log or a few chunks of wood to maintain even heat.
Shake off excess marinade and sear the pork over direct heat until grill marks form. Move them away from direct heat once grill marks are there to finish cooking. Use a meat thermometer to ensure you reach the correct temperature. You are aiming for about 140°F (60°C). Place the chops on a platter or board to rest and finish coming up to temperature.
Using a heat-resistant glove, move the frying pan over direct heat and add the remaining vinegar mixture. Allow it to simmer until it begins to thicken, then add your peach slices, cooking until tender and glossy.
Serve the pork chops topped with peaches and sauce. Garnish with crumbled cheese, and don’t forget your favorite seasonal vegetables.
