THE METHOD

COOK IT.

Preheat your Pit Boss Grill to 350°F. Once your grill reaches temperature, open the sear plate and turn the temperature up to high.

When flames appear through the open sear plate, start to broil the steak on all sides.

Once your steak is seared on all sides, close the sear plate, and set your grill to 250°F.

Next, place the steak on the top rack and smoke until you reach an internal temperature of 128-132°F.

When your steak reaches the desired internal temperature, remove from the smoker and allow to rest for 5 to 10 minutes before carving.

Garnish with balsamic reduction (vinegar, salt, chipotle puree, water, lime zest, garlic), broken basil, and cherry tomatoes before serving.
