THE METHOD

COOK IT.

01

Preheat grill or smoker to 375°F.

02

Mince the roasted chiles and add to a bowl with shredded cheese, cumin, oregano, and salt. Mix to combine.

03

Lay out sheets of puff pastry and evenly distribute the cheese and chile mixture between the two sheets.

04

Roll each side of the pastry into the middle, so that it forms a 'heart' shape.

05

Cute the rolls into 3/4" thick pieces. Lay the pieces flat on a baking sheet with space in between each piece.

06

Refrigerate the palmiers for 4-5 minutes before cooking.

07

Place the sheets on the upper rack of the grill and bake the palmiers for 10-15 minutes, or until golden brown.

08

Remove the trays from the grill and carefully remove the baked palmiers from the trays with a spatula. Allow to cool for 4-5 minutes before serving.
