COOK IT.
Preheat pellet grill to high heat.
Rub steak with oil and season with salt and pepper.
Open the sear plate on your Pit Boss grill and sear the outside of the steak over an open flame until desired color is reached.
Close the sear plate and set grill to 350°F.
Place a temperature probe into the thickest part of the steak, one inch away from the bone to get an accurate temperature reading.
Place steak on center rack and close the grill lid.
Allow the steak to reach an internal temperature of 120°F. We cooked our steak to medium-rare.
Remove from the grill and allow to rest 15 minutes before slicing and serving.
