THE METHOD

COOK IT.

01

Before you begin, place a metal or glass bowl and the beaters for a hand or stand mixer into your freezer while you gather the ingredients. This will make whipping go faster.

02

Preheat your grill to 500°F+ (260°C), preparing to use direct heat.

03

Remove the peaches from the package, reserving the juice. Pat the peaches dry. Drizzle the peaches with the butter, then grill, over direct heat, until char marks form. Allow the peaches to cool before chopping into bite-sized pieces.

04

Chop the praline pecans into small chunks.

05

In a medium bowl, combine the vanilla, condensed milk, and some of the reserved peach juice. Beat together with a spoon until smooth.

06

In the frozen bowl, whip the whipping cream on high until soft peaks form. Gently fold in the condensed milk mixture. Freeze the ice cream base for at least 45 minutes to 2 hours before adding the chopped peaches and chopped praline pecans. Stir in half so that they’re distributed throughout and then use the remaining on top. Chill in the freezer until set.

07

Once set, you can prepare to serve. Reheat the grill to 500°F+ (260°C), grill slices of pound cake over direct heat until grill marks have formed, and the cake is warmed through. Top the grilled pound cake with a scoop of ice cream and any extra toppings you want, like praline pecans, caramel corn, and grilled peach halves.

08

Pair this delightful dessert with a fruit-leaning Belgian Tripel, IPA, or a Pale Ale. For a wine pairing, a late harvest Riesling or a dry sparkling wine will do nicely.
