Grilled Pineapple Mai Tai

Take your summer cocktails to the next level, Pit Boss style! Juicy grilled pineapple adds the perfect sweetness to the classic mai tai. This refreshing drink will be the finishing touch to any backyard BBQ! Fire up the grill and raise a glass to summer!

THE METHOD

COOK IT.

Start by preheating your Pit Boss to 350°F.

Cut the pineapple into medium-sized chunks and sprinkle with brown sugar on both sides.

Place the pineapple chunks directly over the flame broiler and allow it to develop grill marks, about 5 minutes.

Take the pineapple off of the grill and directly into a cocktail shaker. Muddle well until the pineapple is broken down and the juice has been released.

Add ice, light rum, orgeat, lime juice, and triple sec into the shaker. Put the lid on the shaker and shake well for 30 seconds.

Double-strain the cocktail into a glass with fresh ice. Add the dark rum float and garnish with grilled pineapple chunks, pineapple leaves, and maraschino cherries.
