COOK IT.
Preheat your wood pellet grill to 300°F
Pat the chicken wings dry with a paper towel, then season with a general-purpose BBQ rub (We recommend the Pit Boss Smoked Salt & Pepper Rub).
Place the wings directly on the grill grates and smoke until they reach an internal temperature of 165°F.
While the wings are cooking, combine the brown sugar, soy sauce, Gochujang, sesame oil, rice vinegar, fish sauce, and minced garlic in a saucepan. Simmer over low heat until the sauce thickens slightly, about 5-7 minutes.
Once the wings are smoked, increase the temperature of the grill to 400°F. Heat a cast iron skillet on the grill grates and sear the wings for 2-3 minutes per side until crispy.
Remove the wings from the grill, and toss them in the prepared wing sauce.
*For extra crispness place back onto the grill with the sear plate open for a few minutes. Be sure to monitor the wings closely during this step to avoid burning.
Remove the wings from the grill, and finish by topping with sesame seeds and sliced green onions.
Serve hot and enjoy!
