Live Fire Grilled Lamb Rib Chops with Peanut Sauce

THE METHOD

COOK IT.

Combine the seasonings and thoroughly coat all sides of the lamb rib chops. Place them on a rack in the fridge until you are ready to cook. This can be done up to 24 hours in advance.

About an hour before cooking, get your fire going in the Timberwolf® Smokeless Fire Pit. Place two solid logs side by side, tuck some fire starters or paper between them, then stack kindling on top.

Light the starters and let them catch. Add a couple of medium logs once the kindling is fully lit. Once the flames burn down to just below the rim, pop your cooking grids on top. When you’ve got a nice bed of coals, you’re ready to cook!

While waiting for the fire, make the sauce. Using a blender or stick blender, combine the garlic, peanut butter, oil, sriracha, lime, soy, and brown sugar. Blend until smooth. You may need to let down with water, adding a couple of teaspoons at a time until you reach the desired consistency.

When the fire is ready, place the lamb over direct heat and grill for about a minute, turning the lamb 90° and grilling for another minute. Flip once grill marks form and repeat. If your lamb is fatty, expect some flare-ups. Keep the lamb moving if the flames are getting intense. You can also bank the coals to one side of the Fire Pit, moving the lamb away from direct heat.

Watch the lamb’s temperature, removing them from the heat at around 127°F (53°C). Resting them will bring them up to a finished temperature of 130°F (54°C).

Drizzle or dip your lamb in the peanut sauce and serve with your favorite seasonal sides. Coconut rice and sautéed green beans are a great pairing.

Drink a Petite Sirah whose dark fruits and black pepper flavorings will enhance the creamy and spicy notes with the strong meat flavors of lamb. If beer is the preferred beverage, an Amber Ale will cut the spice and lend itself to the intensity of the lamb.
