COOK IT.
Preheat your grill or smoker to 275°F
Using a trimming knife, trim silver skin and any extra fat from short ribs.
In a small bowl, combine honey, mustard, and sriracha. Apply an even coat of this binder to all sides of the short ribs with a sauce mop.
Season all sides of the coated ribs with BBQ rub, evenly.
Place the short ribs on the upper rack of the preheated grill/smoker and smoke until they reach an internal temperature of 165°F, approximately 2-2.5 hours.
Remove the ribs from the smoker, rubs each side with softened butter, then wrap in butcher paper.
Place ribs back in grill/smoker and cook until they reach an internal temperature of 205°F, approximately 4 hours.
Remove ribs from the smoker and allow them to rest for one hour, wrapped. Then, unwrap and glaze or serve with favorite BBQ sauce.
