Mediterranean Style Chicken Hearts Over Live Fire

THE METHOD

Rinse the chicken hearts and pat them dry.

In a blender, combine the roughly chopped onion, garlic, ginger, spices, and olive oil. Blend until a paste is formed. Season with salt and pepper. This paste will stain anything and everything thanks to the turmeric. Remember to wear gloves and an apron.

Clean any spills immediately.

Add the paste to a non-reactive bowl or vessel and toss in the hearts, stirring until coated. Marinate the chicken hearts in the fridge for 30 minutes to 4 hours.

About an hour before you are ready to cook, build your fire in the Timberwolf® Smokeless Fire Pit. Start by laying two solid logs parallel to each other in the base of the fire pit. Nestle a few fire starters, wood shavings, or crumpled paper between them. Stack kindling on top, perpendicular to the logs, creating a log cabin-style structure.

Light the fire starters and let the flames catch. Add one to two medium-sized logs as the fire builds, then allow it to burn down until the flames sit just below the rim of the fire pit. Carefully position your cooking grids over the top. Once the flames have burned down to coals, it is time to cook.

Remove the chicken hearts from the fridge and, using gloves, skewer 5 to 6 hearts per brochette.

Grill the chicken hearts over direct heat for 10 to 15 minutes, flipping often. The goal temperature is 165°F (74°C).

Serve the skewers hot with a light salad of cucumbers and tomatoes, warm naan, and a yogurt dip.

Pair this with a Porter or Brown Ale for a semi-traditional flavor profile, or if you would prefer to have wine, an off-dry Riesling or light-bodied Pinot Noir will be perfect.
