Smoked Meatball Sub

Everyone loves a classic meatball sub, but it’s time to take things to the next level, Pit Boss style. Homemade smoked meatballs are smothered in a rich tomato sauce and finished with melty mozzarella cheese all on a toasty hoagie roll. It’s smoky, cheesy, and packed with flavor. This recipe is so simple and delicious, you’ll find yourself coming back to it again and again.

THE METHOD

COOK IT.

Start by preheating your Pit Boss to 225°F

Place your cast iron skillet on the grill and allow it to heat up with the grill.

To make the meatballs, combine ground beef, eggs, minced onion, Italian bread crumbs, 2 tsp roasted garlic paste, and Pit Boss Bold Burger Rub. Mix well until all of the ingredients are evenly incorporated. Form the ground beef mixture into 1.5 inch balls.

Place the meatballs into the preheated cast iron skillet. Allow the meatballs to sear and smoke for 15 minutes. Flip the meatball halfway through to ensure even cooking.

Once the meatballs are browned on all sides, add tomato sauce, salt, red pepper flakes, and 2 tsp garlic paste into the skillet. Gently stir to coat all of the meatballs in sauce.

Increase the temperature to 300°F and allow the meatballs to simmer for 20 minutes uncovered.

Once the meatballs reach an internal temperature of 165°F remove them from the grill.

Place the rolls on the top rack of the grill to heat up and get toasty.

Open the rolls and add 2-3 meatballs per sandwich. Top with extra sauce and shredded mozzarella cheese. Place the subs into an aluminum pan and place it back on the grill.

Once the cheese is nice and melty, remove from the grill and top with freshly chopped basil.
