COOK IT.
Start by building a fire right in the Timberwolf® Smokeless Fire Pit. Lay two solid logs side by side with a bit of space between them. In that space, tuck in a couple of fire starters, some wood shavings, or even crumpled paper—whatever you’ve got on hand to help get things going. Then, stack a few pieces of kindling across the top, like you’re building a little log cabin.
Light the fire starters and let the flames catch. Then, add a couple of medium-sized logs to build up the heat. Let the fire burn down a bit until the flames sit just below the rim of the fire pit. At that point, you’re ready to carefully place your cooking grids over the top, letting the fire burn down.
While the fire burns down, add the brie, to a cast iron skillet. Score the top of the brie, then surround it with mixed berries. Tuck in your prosciutto and favorite mixed nuts. Drizzle everything with honey, a few grinds of pepper, and sprigs of fresh thyme.
Place the loaded cast iron over the flames on your Timberwolf® Smokeless Fire Pit and allow it to cook for about 15 minutes.
While your cheesy-berry skillet is cooking, slice the bread and drizzle it with a little high-temperature oil. Once the cheese has burst open and the berries are bubbling away, move the skillet off of direct heat and toast the bread.
Be sure to use heat-resistant BBQ gloves to move and remove the skillet from the heat and place it onto a trivet for serving immediately. Garnish with balsamic drizzle or balsamic pearls and a final drizzle of honey, before digging in with the toasted bread.
Light-bodied Beaujolais will pair beautifully with a brie that isn’t overripe, or aim for a smooth Pinot Noir with a long finish. If beer is the preferred beverage, spicy Saison ales will complement the brie’s creaminess and pair beautifully with the hints of black pepper, while an amber lager will highlight the earthier notes of the cheese.
